Here I Am!

Again, I didn’t intend to let so much time pass. Seems like there’s always so much going on… I’m sure you can relate! I’ve been working on a few things and I want to share them with you. First being, I’ve made a few changes in my diet and you will see that reflected in some of my recipes. Don’t fear! They’re still AWESOME! And I will still be including the types of dishes that I don’t intend to eat… I’ll just be feeding those to my Dad!

If you’ve struggled with your weight as I have, I highly recommend a diet that is high in protein and low in carbs. I haven’t been hungry with this type of eating and I lost 10 pounds the first week! There are a ton of resources out there on the internet and even groups/pages on facebook you can follow. I’ve been doing a little cooking this past weekend and I’ll be sharing those recipes with you this week. It’s good to be back!

Sad News For Mabel

Sad Wallpaper_3

First, let me apologize for my long absence.  It has been a crazy busy Summer!  Now, for the sad news… Mabel is no more.  Unfortunately, she was parked at the mechanic’s garage and I had not checked on her.  The mechanic knew, but failed to tell me that she developed a terrible leak from the ceiling and it ruined the inside.  You could smell the mold as you walked up to her.  I was already unhappy with the mechanic for NEVER starting ANY work on the motor and then finding out the whole inside would have to be scrapped and remodeled was just too much!

By the time I would have replaced the engine and anything else mechanical and gutted and replaced the insides, I could buy a new or at least newer motorhome.  So, sadly, I made the decision to sell her for scrap.  Can you say OUCH?  I sold Mabel for 1/10 of the purchase price.  Now I’m back at square one with just a dream.

The good news?  I actually do have a few new recipes to share, so watch the blog this coming week!  I’ll be adding one or two and hope to be back on track.

I also have some info to share with you as I have joined the ranks of Canners everywhere!!  I’ll be doing a series of posts on my introduction to canning.  No, I did not have a garden, but I plan one next year.  This year, I’ll be starting with making meals in advance and canning meats.  The almanac is calling for a bad Winter, and I have no intention of braving the whipping winds, snow, sleet and icy roads.  I’m going to stock up and stay cozy inside!

I realize I’m all over the place with this post, but I just have so much to share!!  I’m really excited that The Pioneer Woman is going to be introducing her new line of kitchenware/dinnerware on September 1st!!  She has been posting sneak peaks on her facebook page… you should check it out!  I am loving it so far!  I’m crazy for color in the kitchen!

A Very Long Hiatus

I’m back after a very long break! Big changes in our household since I first started this blog. We are no longer in the house in the country. Long story, but best for my daughter and I! Everything happens for a reason. We are currently back in town, but in a good way… I am buying what was formerly my grandparent’s home. home2 Obviously, it needs a lot of work, but it’s the first place we’ve lived in a very long time that feels like home. My grandparents moved here in the 1940’s from Kentucky and did all the work themselves. Even with all of my furniture and decor, I still see the past in this home and I love it! I have started working on things inside that HAVE to be fixed/replaced and hoping to take care of the exterior appearance in the next year. Even though I’m back in town, I’m still a country girl at heart and that’s my style of cooking.

In addition to the move, I opened a store. It had long been a dream of my sisters and I… and our mother when she was still with us.

Things are finally slowing down for me a little and I have more time to get back to blogging. I will continue to share recipes here and may even add some crafts and handmade items. Thanks for visiting Backroad Kitchen and I hope you’ll visit me again!

Return From The Bahamas!!

photo (24)

I’m back!!!  My daughter and I returned from our 12 day vacation!  We left a few days early and drove to Florida to meet our ship, Freedom of the Seas for a week-long cruise.  It was a Royal Caribbean ship and our second cruise with this line.  The best part of all?  The cruise was FREE.  Paid for by the awesome company I work for….  I achieved the rank of Diamond in December, which qualified me for the trip.  I love hanging with my friends from the company.  They’re more like family.  We have such a good time!!  I haven’t downloaded any pics yet, but for those of you that are my facebook friends, I’m sure I’ll be posting some soon.  If you would like more info about joining my team and creating an amazing income like I have, please message me.  I’ll be happy to send you the info!

Now, back to the business at hand, this blog!  I have a busy week of cooking and baking planned!  I’m so happy to be home!  I’ve missed my home (and kitchen) and my online friends!  I hope you’re ready to start cooking too!!!  I’m spending this evening trying to get caught up on my business emails and questions from my team, then I plan on making up my grocery list and getting started tomorrow!  Watch the blog and/or your email for new stuff!!

Let It Rain Down On Me

photo (7)1

I love a good thunderstorm… and the hard rain that follows. I took this pic in August and I’m so glad I did. I had listened to the thunder for a while and when the wind picked up, I sat out on the porch and watched the rain as it came toward me. Fall is here now and the fields around me have dried up and the farmers are beginning to harvest. Before we know it, Winter will be here and the snow will be blowing across the empty fields. Let’s enjoy these last warm days while we can!

Story of a backroad kitchen…

It has always been my dream to live in the country… just as I did growing up.  Due to the woes of being a single parent, we haven’t always lived in the country, but our lives have changed dramatically in the last year, due to a set of circumstances that led me to an incredible business opportunity and even better, some pretty awesome new friends.  This has allowed me to make some pretty awesome changes in my life and now to pursue things that make me happy!   I’ve blogged in the past, but let life get in the way and let it go…  now, I have a chance to start this new blog and see where it goes.  I’m pretty excited about it!  With my business, I’ve met a lot of new people and developed a following on facebook.  At their urging, I started looking for a way to catalog recipes and info in a more easily accessible location.

My daughter and I found this pretty awesome homestead and fell in love with it!  We are currently renting and there is a possibility to buy.  I never look too far ahead because life can change in the blink of an eye… we lost my Mom suddenly and unexpectedly on November 1st, 2006.  Since then, I’ve never taken another moment or day for granted.  So for now, at least until my lease is up next Summer, we are here on a back road in Rush County, Indiana.  The property manager told us that before the remodel, the house sat empty for some time, home only to a local raccoon family.  It’s a roomy, old farmhouse and I have a big country kitchen, complete with 80’s colored paint on what appears to be the original cabinets.  I had to scratch my head at the manager’s choice of country blue and salmon pink…lol, but at least the whole house is clean and freshly painted!

I’ve been stocking my kitchen in preparation for the grand opening of my blog and I will soon be adding new recipes regularly!  Thanks for stopping by and don’t forget to add your email on the upper right side of the page to receive new blog posts via email!
